Tamashii Ramen House in Midtown OKC is the original location, opening its doors in June 2015, and it set the standard for the other spots that followed. Known for broths that are simmered for 10 hours, this is where the rich, creamy tonkotsu and other ramen classics were perfected. (“Tamashii” literally means soul, which shows in the care poured into every bowl.) Midtown’s energy keeps the vibe lively, with a mix of downtown employees, residents, and late-night diners flowing through.
While the ramen menu currently offers about nine options, the classic tonkotsu is hard to beat: melt-in-your-mouth braised pork belly, tender noodles, and deeply flavorful pork bone broth. Begin with takoyaki (crispy octopus dumplings) or hand-rolled gyoza, and round out the meal with garlic fried rice presented to your table in a sizzling skillet or chasudon (braised pork over rice with sweet-savory sauce and truffle mayo). For dessert, traditional mochi provides a light, sweet finish.

• Tamashii regularly hosts guest ramen events from Japan as well as original in-house events.
• Try their Japanese-inspired beers, locally brewed by Frenzy Brewing Co. in Edmond: Tamashii Premium (full-bodied lager) and Tamashii JPA (IPA with yuzu).
• They don’t accept reservations, but you can join the online waitlist and get notified when your table is ready.
